Homemade Bloody Marys

bloody-maryI will never understand why I waited 34 years to try one of these! I had this idea in my head that because I don’t like raw tomatoes that I wouldn’t like bloody marys. It’s further proof that you can’t judge something until you try it first! I mean how do you know if you haven’t experiencedit?! #learningtotrynewthings #stopjudging It’s seriously so good!

My hubby & I created this spinoff from a friends recipe! No better reason to treat yourself than a homemade bloody mary! I can smell the bacon & hear the south western omelet with brie calling my name! #sundaybrunch #yum

11 Tomatoes
1 Green Bell Pepper
2 Stalks Celery
1 Jalapeno, seeded
5 Cloves Garlic
1/4 Cup Shredded Carrots
2 Limes, juiced
2 Tbsp Worcestershire Sauce
1 Tbsp Texas Pete
1 Tbsp Salt
1 Tbsp Cracked Pepper

Chop all veggies, toss in a deep sauce pot. Bring to a boil, reduce to a simmer & cover. Simmer 30 – 40 minutes until veggies are broken down.
Blend in batches until smooth.

Italian Wedding Soup


1 tsp olive oil
1 Onion, diced
4 Cloves Garlic, minced
6 cups low-sodium cage free chicken broth
1 bunch swiss chard
20 Italian Meatballs
2 large eggs
2 Tbsp fresh grated parmesan cheese
Salt & Pepper to taste

Heat oil in large sauce pan over medium heat.
Saute onion about 4 – 5 minutes until translucent.
Add garlic, saute one more minute.
Add broth, bring to boil.
Add greens, reduce heat to low, gently boil, covered for 10 minutes.
Add meatballs cook 5 minutes, stirring occasionally.
Beat egg & cheese together in a small bowl, with fork.
Stir egg mixture into hot soup. Gently boil, covered about 30 seconds, until eggs set.
Season with salt & pepper & serve.

Meat Balls – (Must refrigerate mixture 1 hour)
2 lbs Ground Chicken
⅓ cup whole wheat bread crumbs (make your own from two pieces of toast)
¼ cup almond milk
2 tsp olive oil
1 Onion, diced
5 Cloves garlic, minced
2 large eggs – beaten
2 tbsp fresh grated parmesan cheese
1 tsp dried oregano
½ tsp salt
½ tsp pepper
Preheat oven to 425
Line a baking sheet with parchment & coat with spray.
Mix bread crumbs & milk set aside for 10 minutes
Heat oil in medium skillet over medium heat.
Saute onion about 4 – 5 minutes until translucent.
Add garlic, saute one more minute.
Combine onion mixture, bread crumb mixture, turkey, eggs, cheese, oregano, salt & pepper in mixing bowl. Don’t over mix, this will make your meatballs dry.
Cover, refrigerate mixture 1 hour.
With wet hands, form into 42 1-inch meatballs. Arrange on prepared baking sheet. Bake 13-18 minutes until browned.

Strong & Healthy for the Holidays


Going into the fall is one of my favorite times of year but it’s also the time of year that I’m most likely to get off track with my health. My body does not like sugar or processed foods AT ALL! My muscles ache, my joints hurt, I don’t sleep well & my belly gets super inflamed (which is not a good look for skinny jeans & boots)! All this just from celebrating holidays! Honestly If I wasn’t a coach & didn’t have the accountability & support of my TRIBE I would slip into a brain fog coma all winter long. It’s so easy to do though……. RIGHT?!?!?

I don’t want to just hope I don’t get the flu or strep throat! I want to build up my immune system NOW while I still have the chance!

My mission is twofold…. I don’t want to get sick & I don’t want to ruin my results by eating everything in sight.
Don’t get me wrong… I’m gonna have a treat here & there….. MY plan is to have accountability & support in place…. Along with a bangin immune system already built up!

My 7 best practices for staying healthy in a busy world!

1. Plan Ahead
Make a plan while you’re in front of the TV & scrolling social media. Print out a calendar for the week. Write down what you want to cook & all ingredients needed. Try to pick dishes that have similar ingredients. Go through your cabinets & mark off everything you already have so you don’t buy double.

2. Prep foods on the weekend
Make it a family affair. Ask your hubby to chop the veggies & the kids to grate the cheese or beat the eggs while you pull it all together. Put on some music & dance around the kitchen while your quiche is cooking. It doesn’t have to be a choir unless you make it a chore.

3. Cook Extra food at dinner
Let’s say you miss meal prep…. Don’t throw it all to the wind. Each night when you prepare dinner just make extra for lunch the next day. Or create a completely separate meal for dinner the next night. You gotta think ahead.

4. Keep healthy snacks on hand
This one is short & sweet & will keep you from just eating whatever when you get HANGRY! Nuts, jerky, 85% dark chocolate, fruit, guacamole & carrots, almond butter & celery, boiled eggs. There are so many options. Get what you like & keep it in travel cooler. They look like hand bags these days.

5. Read the ingredients
Packaging can be so misleading these days! Everything says 100% all natural. YIKES! Thankfully we have google! If you don’t know what’s really in something, don’t chance it. Go for things labeled organic & non-GMO but even more so go for fresh fruits, veggies & meats. Shop the perimeter of the stores.

6. Rotisserie chicken instead of fast food
If you look up & the day is gone & there is no way you are cooking anything!!!!! Drop by the store…. grab a rotisserie chicken & some frozen veggies instead of hitting the drive through.

7. Stop at the grocery store
If you’re on the go, forgot your lunch or just have no time today……. Stop by the grocery store & grab a sandwich & a piece of fruit. Plus all the deli counters have prepared food now with a meat & two sides for like 6 bucks! It’s a great value & fresh food.

Hot Oatmeal Smoothie

1/2 Cup cooked oatmeal
8 oz unsweetened Almond Milk
2 tbsp honey
1/2 a banana

Blend them all together while the oatmeal is still hot & serve! #perfection

*~* Gluten Free Berry Crapes *~*

1/2 Cup Crushed Almonds
3 Tbsp Flaxseed Meal
2/3 Cups Unsweetened Almond Milk
2 Eggs
2 Egg Whites
3 Cups Muddled Berries
3/4 Cup Ricotta Cheese

Mix almonds, flaxseed, almond milk & eggs in a nutribullet.

Heat skillet on medium high heat, coat with coconut oil cooking spray. Spread a thin layer of batter in the bottom of the skillet. Cook until the mixture bubbles all over. Flip brown the other side.

Fill each crape with 2 tbsp Ricotta & 1/2 Cup Muddled Berries.

Makes 6 Crapes

Sweet Potato Crust Quiche

~ 6 Free Range Eggs
~ 1/4 Cup Heavy Cream
~ 2 Cups Raw White Cheddar Cheese – Shredded*
~ !/2 Medium Onion – Diced
~ 1 Head Broccoli Florets
~ 1 tsp Dried Ground Mustard
~ Salt & Pepper to taste

For the Crust
~ 2 Medium Sweet Potatoes – Grated
~ 1 Free Range Egg
~ Salt & Pepper to taste

First the Crust! ~
Preheat oven to 450 degrees.
Spray a deep pie dish with coconut spray.
Mix together grated sweet potato, egg, salt & pepper.
Press grated sweet potato mixture into the pie dish forming a crust. Make sure it’s one even layer no holes.
Bake for 30 minutes. If the edges start to brown, cover with foil. Let rest for 10 minutes. Some ovens may vary, the crust should be good & dry. Adjust cooking time accordingly.

For the filling ~
Reduce heat to 350 degrees.
Beat eggs, heavy cream, ground mustard, salt & pepper until light & fluffy. Then mix in all other ingredients. Pour into your sweet potato pie crust & bake for 30 minutes. Again if the top starts to brown before the middle is done, cover with foil. Allow to rest for 20 minutes.

*I get blocks of raw white cheddar cheese at Trader Joes & shred it fresh myself. Makes the quiche so much more fluffy this way!

New Bonus Mom Advice

I had a girlfriend ask me the other night…… what would I say to a fairly new step mom who is trying to find her way in her new surroundings. I thought I would share it here in hopes that my experience might help easy someone else’s learning curve. I tend to not talk about the fact that I’m a step mom much just because I don’t “Feel” like a step mom. I just feel like a mom & this is my life & I have been given the gift of settling in to a sweet spot in my family. Sometime I tend to forget how different things where just a few short years ago. This question posed to me brought back all kinds of images & emotions. So here are the main things I learned early on & where my focus was as a new mom to children who I didn’t give birth to.
1. Rejection has nothing to do with you & everything to do with their hurting hearts. They are little people who don’t know how to, nor where they supposed to have to deal with this kind of situation. They are literally doing the best they know how with overwhelming circumstances they have zero control over.
2. You are there to love them. Not suck love from them! You have to find a way to be full on your own….. Don’t try to use them to fill your insecurity, pain or loneliness. Get filled up with prayer, meditation, personal development. But whatever you do don’t use them for your emotional gain. There will only be more pain at the end of that road.
3. Dad must lay down ground rules & teach them to respect you or you’re really in a no win situation. You both have to be on the same page about respect, discipline & how to handle it. You have to earn your own respect over time…. But first he has to show them!
4. Unconditional love is hard to give but even more so when you don’t have the bond between mother & child. I always focused on how much I adore my husband & I let that love flow over to them. Trust me there were moments I had no idea how I was going to love little people who were constantly rejecting the notion of me.
5. Learn to love their mom! Yep, I said it & whether you like it or not she is now one of the most important relationships you will ever have. If you guys are polar opposites look for what your kids love about their mom. See that instead of your differences. They love her & she’s not going anywhere. If you’re diligent you might just forge a friendship in spite of it all!
Let me just say this whole situation is one of the most complex that I have ever experienced & it’s also one of the most rewarding if you choose to let it shape you into a better person. Please don’t be fooled, I am no angle! The kids mom & I have had major fights, said spiteful things, disagreed & behaved like children ourselves. BUT we choose to say I’m sorry. We choose to grow up & put our pride aside. If you choose to be caddy & shallow, seeing who can one up the other, the kids are the only ones that get hurt by your foolish pride in the end.

Zucchini Nachos

Serves 2

1 Pound Grass Fed Ground Beef
2 Zucchini
1/2 Cup Raw Shredded Cheese
1 Can Black Beans
1/2 Cup Cooked Rice

Taco Seasoning
• 1 tablespoon chili powder
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 1/4 teaspoon dried oregano
• 1/2 teaspoon paprika
• 1 1/2 teaspoons ground cumin
• 1 teaspoon salt
• 1 teaspoon black pepper

For the Zucchini Chips
• Preheat oven to 425 degrees
• Thinly slice the zucchini using a mandolin. I used #3 thickness.
• Line a paper towel with zucchini slices then top with another paper towel and press out excess moisture. This will help chips to cook faster.
• Spread zucchini slices in an even layer on a cookie cooling wrack & place that on top of a baking sheet. This will help them crisp up. You may have to do several batches.
• Bake for 10-12 minutes until chips begin to brown and crisp. YOU NEED TO KEEP AN EYE ON THEM! There is a fine line between browning and burning & it happens FAST!
• Remove from the oven and sprinkle with salt and pepper.

For the Nachos
• Brown 1 Pound Grass Fed Beef with Taco Seasoning
• Top the zucchini Chips with browned ground beef, black beans, rice & cheese.
• Bake on 350 for 15 to 20 until heated through & cheese is melted.
