*** Give Surprises ***

I think this is one of the main reason I love Christmas so much. I LOVE TO GIVE! I love to see the look on my kids’ faces when they open exactly what they wanted & then of course the exuberant energy of hugs & kisses that follows is always welcomed!!! How does it make you FEEL when someone gives you an unexpected surprise?! IT FEELS AMAZING! So why not give that gift to some unknown soul today. Seek them out even. Maybe it’s someone at your office who is over worked & underpaid. Give them a small card & remind them they are appreciated. Give your husband a hand written love letter just to remind him of how he still gives you butterflies. Offer to help an elderly person load their groceries in their car. What a huge help this will be to them & it energized your soul. It’s also contagious so you will want to do it more. You don’t have to have money to give, you can always give of yourself!

Quinoa Enchilada

  • 1 Pound Ground Turkey – Cooked & Crumbled
  • 1 1/2 cups uncooked Quinoa
  • 1 can (15 ounces) Black Beans
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1/2 cup Salsa
  • 5 Garlic Cloves – minced
  • 1/2 cup Onion
  • 1/2 cup sweet Bell Peppers
  • 1 cup waterQuinoa Enchiladas 2
  • 1 packet dry Enchilada Seasoning
  • 1/8 tablespoon Cayenne Pepper
  • 1 teaspoon Cumin
  • 2 cups Sharpe Cheddar
  • 1/3 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice,
  1. In a large skillet, brown & crumble the ground turkey. Drain and place in the slow cooker.
  2. In the slow cooker add in the uncooked quinoa (rinse first), black beans (drained & rinsed), diced tomatoes & green chilies (do not drain), the salsa, minced garlic, chopped onion, chopped sweet bell pepper (If desired  add a chopped jalapeño)
  3. Add in the water, enchilada seasoning, chili powder & cumin.
  4. Stir everything together really well. Cover the slow cooker and cook on high for 2 1/2 to 3 hours or until all liquid is absorbed. (If your crockpot is new you only need 2 hours for sure. I burned my first batch! ;p)
  5. When it’s done cooking, remove the lid stir. Add in cheese, fresh cilantro (stems removed and chopped) & fresh lime juice.

**** Additional Options**** Sour Cream, Green Onions, 1 small jalapeno, Chopped Green Onions or warm Flower Tortillas.

Michelle Carter Hunter is one of those unimaginably extraordinary people & she doesn’t even know it. Its because she gets up every day when she doesn’t want to. She handles business when she’s sick, she stays up late to works on herself. She gets up early when all she really wants to do is stay in bed. She doesn’t allow excuses to hold her back & QUITING IS NOT AN OPTION! She is a divorced mother of two beautiful young women, with deceased parents and an ex husband who gives her ZERO HELP through the week! Her girls are both teenagers who Cheer after school & one is in Volley Ball as well.

She has a full time job where she has been promoted twice since starting her transformation as well as changed homes this year. She participates in fundraisers on the weekend & church twice a week. All of this as a true single momma!!!

My point is as a single mother it would be very easy for her to say…. I don’t have enough time to take care of me…… or…… I don’t have enough money. Things are just too tight…… but she understands that her actions set the tone for herself & her girls lives.

We all have the same obstacles. They may come as different hurtles but life is still the same. There will never be a right time, there will never be enough money, life will not slow down!!! You must make it happen. Go after what you want as if your life depends on it.

Roasted Acorn Squash

Nothing says fall like the smell of acorn squash roasting in the oven. This is such a tasty & easy dish. Plus it is so fragrant. It fills up my whole house.

1 cup only has 56 calories… YUM!

1 Acorn Squash

2 tbsps Olive Oil

Salt & Pepper

Garlic Powder

Grated Parmesan Cheese

Preheat oven to 400 degrees.

Place sliced acorn squash on a large lined cookie sheet. Coat one side with olive oil, garlic powder, salt, pepper & parmesan cheese. Turn over & repeat on other side.   Roast at 400 degree for 25 minutes, or until the acorn squash is tender.

 

The Little Black Dress Challenge

I am in no way interested in getting soft or gaining weight over the holidays. I want to show up at the holiday party like I am three months in to my New Years Resolution!

*~* Motivate Me Monday *~*

The greatest thing about Monday is the fresh start. If you don’t like the way your life is going….. CHANGE IT! Control what you can & let go of what you can’t. Everyday you can have a fresh perspective, grow your mind, look for the positive & change your attitude. That is ultimately what drives your lifes outcome anyways.

Do something you have never done today. Learn something new, open your mind to someone else’s point of view. Give in to the fact that you don’t know everything & if you quit growing you are becoming stagnant & stale. Breath in the fresh air of a new day & CREATE a new chance for yourself!
