Mocha Peanut Butter Love Cake!

STEP ONE: What you need:
~ 4 tbsp of Coconut Oil.
~ Few drops PURE Coffee Extract
~ 2 tbsp of Peanut Butter Non – GMO / No Canola Oil
Check the back of the labels under ingredients and it should just say PEANUTS! Nothing else! Don’t let their “ALL NATURAL” labels fool you.)
– Packet or scoop of Chocolate (or Chocolate Vegan) Shakeology.

STEP TWO:
a.) Melt 2 tbsp of coconut oil for 15 seconds.
b.) Add in 1/2 scoop of Shakeology and mix together. (
C.) Few drops PURE Coffee Extract
d.) Pour mix into desired containers (ramekin or mini muffin pan)
e.) Put in freezer for 5 minutes.
f.) Take out and spread even amount of PB over frozen chocolate.
g.) Melt 2 tbsp of coconut oil for 15 seconds.
h.) Add in 1/2 scoop of Shakeology and mix together.
i.) Pour overtop the PB to cover completely.
j.) Freeze for 15 minutes.
k.) Take out of container.
l.) ENJOY!!!

Recipe makes approx 4 servings depending on what type of container you use!

Cherry Crunch Snack

I have literally had this the last five days in a row for an afternoon snack! SOOO GOOOD!

Cacao Nibs are a Chocolate Treat & Crunchy Antioxidant for Pick-Me-Up. Cherries are low in calories, high in fiber and packed full of nutrients.

So Delicious dairy free cultured coconut milk is made with six live active cultures, making it the perfect alternatives to dairy yogurt.

Mix them all up & you have a healthy, satisfying treat that will fill you up for hours. ENJOY!

Apple Pie Sangria

5 Cups FRESH Apple Cider

2 Bottles Moscato

2 Cup Club Soda

1 Cup Caramel Vodka

4 Honeycrisp Apples, Chopped

3 Starkrimson Pears, (if possible but any pears will work) chopped Apple pie sangria 2

2 Cinnamon Sticks

 

Chop fruit & place in bottom of your pitcher. Add Caramel Vodka, Moscato & FRESH Apple Cider. Let this stand in the refrigerator for at least 24 hours. STIR, STIR, STIR!!!!

2 – 4 hours before serving add Club Soda & Cinnamon.  STIR, STIR, STIR

Make sure to add some of the fruit to the serving glass. I like to add a miniature, decorative fork for guest to eat the fruit with.

Flourless Espresso Brownies

CUCUMBER-DILL TEA SANDWICHES

1 packages light cream cheese, softened

1 loaves white sandwich bread

1 English cucumbers

1/4 cup chopped fresh dill

1 cups diced spring onion

1 tablespoons Worcestershire sauce

Salt & pepper to taste

I did these a little different than the traditional Tea Sandwiches you’re used to. I chose to chop & mix all the ingredients together to save time

1. Let the cream cheese soften.

2. Using the food processor finely dice some all, of your green herbs & veggies. This will keep the water from the cucumbers contained, which is an added bonus in making the cream cheese mixture more spreadable on the white bread.

3. In a large mixing bowl, add your diced greens, the Worcestershire sauce, salt, pepper & the softened cream cheese. Add a little water if necessary until the consistency is soft, creamy, and easy to spread (not too thin, otherwise it will soak through the bread).

4. Lay out slices of white bread, add a dollop of the mixture (about 3 tbsp per slice) to each slice. Spread to the edges in a thin layer & combine to make one sandwich.

Chill in the fridge until just before serving. Slice off crusts with an extremely sharp knife, cut in half & then half again to make four mini sandwiches.

Apple Cinnamon Goodness

OK So I have no delusions that this is apple pie!….. BUT…… it gives you that warm apple pie feeling!

So good & so easy!

2 Honeycrisp Apples cored & chopped

2 tbsp Cinnamon

Bake in a greased casserole dish on 350͒  for 40 minutes.

 

You could add a nice coat of honey before you add the cinnamon if you like.

 

So DELICIOUS is right!

It’s summer time & I LOVE ICE CREAM! I grew up in Myrtle Beach where ice cream was a part of your daily meal plan.  When we moved to Cornelius NC the summer I turned 12, I remember the ice cream shop I would ride my bike to. I would always order the same thing. A two scoop cone with cookies & cream on the bottom & mint chocolate chip on the top.

As an adult I have learned some things & pay a little more attention to what I put in my body but I don’t want to sacrifice TASTE! If it tastes bad I WILL NOT EAT IT! Now I have a healthy alternative.

Erythritol is the sweetener used instead of sugar in coconut milk ice cream. It isn’t nearly as weird or bad as it sounds, and can be derived from non-GMO, ethically sourced plants. So Delicious made a “no sugar added” line right, and went with a safe, low-glycemic sweetener. SWEET!!!

There is no funny after taste….. this stuff is just good! YOUR WELCOME! ;p

 

Gooey Waffle

This is a fantastic alternative to a traditional waffle breakfast. My kids love this any time of day. Also makes for a great after school snack they can make quick.
